This afternoon I made some cookies. I was looking to make something that I can eat without over abundance of sugar. I did some prompting of AI and the following came back (with a couple of refinements).
Ingredients
- 1 cup unsweetened applesauce
- 1 1/2 cups rolled oats
- 1/2 cup all-purpose or whole wheat flour
- 1 egg
- 1/2 cup raisins
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat oven: Set to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix wet ingredients: In a large bowl, whisk together applesauce, egg, and honey or maple syrup (if using).
- Add dry ingredients: Stir in oats, flour, cinnamon, baking powder, and salt until fully combined. Fold in raisins.
- Form cookies: Scoop about 2 tablespoons of dough, shape into cookies, and place on the baking sheet.
- Bake: Bake for 15–18 minutes, or until cookies are golden and set.
- Cool: Let cool on a wire rack before serving.
These are yummie – I think I will be making them again!
