Applesause Oatmeal Raisin Cookies

This afternoon I made some cookies. I was looking to make something that I can eat without over abundance of sugar. I did some prompting of AI and the following came back (with a couple of refinements).

After coming out of the oven…

Ingredients

  • 1 cup unsweetened applesauce
  • 1 1/2 cups rolled oats
  • 1/2 cup all-purpose or whole wheat flour
  • 1 egg
  • 1/2 cup raisins
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  • Preheat oven: Set to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix wet ingredients: In a large bowl, whisk together applesauce, egg, and honey or maple syrup (if using).
  • Add dry ingredients: Stir in oats, flour, cinnamon, baking powder, and salt until fully combined. Fold in raisins.
  • Form cookies: Scoop about 2 tablespoons of dough, shape into cookies, and place on the baking sheet.
  • Bake: Bake for 15–18 minutes, or until cookies are golden and set.
  • Cool: Let cool on a wire rack before serving.

These are yummie – I think I will be making them again!
